How do I start a new collection?

I have StampManage 2022, and when I started using it, I selected maybe a dozen countries I mostly collect from. (I don't remember under what tab I did that or how to change/add to it.)

Now, I'd like to add stamps from other countries, but those countries are not on the drop-down menu anymore - only the few countries I chose at the beginning.

How do I get ALL country names to show up on the drop-down menu when I go to add a stamp?
